Today everyone loves pizza with lots of cheese and different toppings. It's so yummy! But have you ever thought about the origin of Pizza and how it became so famous. Let's discover some of the interesting facts and history about pizza.

pizzaOrigin of Pizza: Pizza was originally founded by the early Greeks who first baked large, round and flat breads. Eventually the idea of flat bread became famous in Italy where, in the 18th century, the flat breads called Pizzas were sold on the streets and in the markets. At that time Pizza had no toppings and it was enjoyed naturally.

Introduction of toppings: In about 1889, Queen Margherita, accompanied by her husband, Umberto I, took an inspection tour of her Italian Kingdom. During her travels The Queen tasted and loved the bread and would eat it every time she was out amongst the people. Summoning Chef Rafaelle Esposito from his pizzeria to the royal palace, the queen ordered him to bake a selection of pizzas for her pleasure. To honor the queen who was so beloved by her subjects, Rafaelle decided to make a very special pizza just for her. He baked a Pizza topped with tomatoes, Mozarella Cheese, and fresh Basil (to represent the colors of the Italian flag: Red, white, and green).

We all know bunny is symbolic and very auspicious for Easter, so how you like the idea of making Easter Bunny Cake:

Ingredients

  • 1 box Betty Crocker cake mix.
  • Carrot cake
  • Water, vegetable oil and eggs called for on cake mix box
  • Tray or cardboard, covered with foil
  • 1 container Betty Crocker Whipped fluffy white frosting
  • 1 cup shredded coconut
  • Construction paper
  • Jelly beans or small gumdrops
  • 1 cup shredded coconut
  • Green Food Color

Method

  1. Heat oven to 350F (170C) Make and cool cake as directed on box for two 8-inch or 9-inch round pans.
  2. Reserve 1 layer for another use or to make a second bunny. Cut 1 layer in half. Put halves together with frosting to form body. Place cake upright on cut edge on tray.
  3. Cut out a notch about one-third of the way up one end of body to form head (small end) as shown in diagram.
  4. Attach half of cutout piece from tail with toothpicks. Frost with remaining frosting, rounding body on sides. Sprinkle with 1 cup coconut.
  5. Cut ears from construction paper; press into notch on top. Use jelly beans for eyes and nose.
  6. Shake 1 cup coconut and 3 drops food color in tightly covered jar until evenly tinted. Surround bunny with tinted coconut. Add additional jelly beans if desired. Store loosely covered.

I like a bit of crunch in my muesli but the crunchy shop varieties are a little too sugary for my taste.  This home made muesli is much healthier.  It's fairly low on sugar and doesn't contain a great deal of fat either.  Serve with milk and sliced fresh fruit such as bananas and strawberries.

Drinking Water while your eating is a Big No No!

It's very common that people drink water between their meals but research has said that a small amount of liquid during meals should be okay but drinking a lot of water, juice, or soda can cause digestion problems. Drinking water and other fluids can cause dilution of stomach acids and digestive enzymes, making them less effective at breaking down food. Whenever possible, it is best to drink fluids before and two hours after meals as this helps uptake of nutrients and move bowels. Reducing the amount of salt and spices added to foods is helpful in reducing the need to drink fluids with meals.

Effects of Drinking water during meal:

  • Liquids taken during meals can dilute digestive enzymes and stomach acids and these are essential to break down the food and absorb nutrients. As it's harder to break down the food, the stomach may produce more acids, which could result in heartburn or acid reflux. This could possible put more pressure on the small intestines as well because the food is passed along from the stomach without being broken enough.

Indian daily breads are called chapati, phulka and roti and parantha and most people make them at home rather tham buy them.  They are made of finely milled whole wheat flour and water. Pooris are fried breads that are usually made on holidays, festive occasions and for entertaining.  Indian flat breads are used to scoop up curries and vegetables.  These are small round pancakes size rounds of dough that are slipped into hot oil or ghee, where they fill with steam and balloon in seconds. Pooris are soft silk like breads with which curries and vegetables are scooped up.   Allow 2-3 per person, depending on the size of the breads and the accompanying dishes. Once you make them and get the hang of it, you too will keep on making them, give it a go!

Ricotta - Is it a Cheese?

Mostly people know that Ricotta is a Cheese but technically, ricotta is not a cheese at all, but a cheese by-product. Its name, ricotta, means cooked again, an obvious reference to the production method used to make it. Ricotta is a fresh, soft, snowy white cheese with a rich but mild, slightly sweet flavor and contains around 5% fat . The texture is much like a grainy, thick sour cream. Not only is it a popular ingredient in such dishes as lasagna, ricotta is used in a wide variety of desserts as well, including cheesecake and turnovers. Since ricotta is made primarily from lactose-rich whey, it should be avoided by those who are lactose-intolerant.

Types of Ricotta you find in market:

  • Ricotta de Pecora - sheep's cheese whey.
  • Ricotta Salata - salted to preserve shelf life.
  • Ricotta Infornata - salted and baked.
  • Ricotta Vaccina - made from whey of cow's milk cheese.
  • Ricotta Secca - harder and used for grating.

Buying and storing tips: Choose the freshest possible and purchase only in quantities you can use within two or three days. Ricotta does not remain fresh long. Wrap in tightly sealed double layers and freeze if necessary. Allow it to thaw completely at refrigerated temperature.
