Adding egg to a hot mixture can cook it before it has been mixed through - the result is a cake containing scrambled eggs!

It is best to use a bamboo skewer to check if a cake is ready - the mixture will easily stick to the bamboo if the cake is not yet cooked, or slip off if ready. This cake is best left in its pan to cool before turning on to a rack. Densely textured cakes, such as this, are more delicate when hot and can easily split if turned out too early. Make sure the cake is completely cooled before splitting.

Tocinillo de cielo (Heaven's little pig) is one of the most surprising desserts of the Spanish gastronomy. We could compare it, in sweet version, with the potato tortilla. From ingredients of common use (eggs, water, sugar) and using a technique of not at all particular elaboration, we get incredible results with little effort! Created in the early years of the last century, when wineries from Jerez de la Frontera donated the leftover egg yolks of the clarification (the egg whites are used to clarify the wine) to the nuns. These, with divine success, mixed them with syrup and they treated to the bath Maria, thus was born tocinillo de cielo... God blesses them!

You will find a ricotta pine nut tart in virtually every bakery in Italy-it is a traditional classic. A slice with a glass of wine in the afternoon is the way to go, and I am inclined to agree. It is lush and creamy, not too sweet, and has nice little bursts of flavor and texture from the peel, caramel, and pine nuts. Yummy!

Quince is a small deciduous tree, growing 5-8 m tall and 4-6 m wide, related to apples and pears, and like them has a  fruit, which is bright golden yellow when mature, pear-shaped. The quince's skin and flesh is very hard and needs to be cooked to bring out the flavour. The whole fruit can be cut into large pieces and slowly simmered in water for several hours, sometimes overnight, until it becomes soft and changes colour to a ruby red. The slower and longer it cooks the stronger the colour. The fruit is strained through muslin for quince jelly and the pulp made into quince paste or candied and preserved as quince slice. This tart  is an absolute hit!
