    Caprese Skewers 
     
    For a simple, no-cook summer appetizer that goes great with barbeque, try these simple insalata caprese skewers. Traditional insalata caprese is served as a salad and is generally an antipasto (starter) for the meal rather than a side dish (contomo). 
     
    Ingredients
    • 1 pint cherry tomatoes, halved
    • 1 (.6 ounce) package fresh basil leaves
    • 1 (16 ounce) package small fresh mozzarella balls
    • Wooden skewers
    • 3 tablespoons olive oil
    • salt and pepper to taste

    Directions
    • Thread the tomato halves, a piece of basil leaf, and a mozzarella ball onto the wooden skewers and repeat until you have used all of the tomatos, basil and mozzarella.
    • Place the skewers on a plate or serving tray and drizzle the olive oil over them.
    • Sprinkle the skewers with salt and pepper.
    • Serve immediately.

    Pro Tips and Alternatives
    • You can also use toothpicks instead of or along with the wooden skewers.
    • Use garlic infused olive oil rather than standard olive oil.
    • Add sliced prosciutto to the skewers – either one slice per skewer or incorporate it into the pattern.
    • Use mozzarella balls that are marinated in oil.
    • Along with or instead of the olive oil, you can also drizzle these with a vinaigrette salad dressing or Italian dressing.
    • Serving suggestion – serve alongside Melba toast or other crusty bread.
    • Parsley can also be used along with the other ingredients or as a garnish.

  • Grilled Corn on the Cob with Garlic Butter

    Grilled Corn on the Cob 
     
    For Father’s Day or any summertime barbeque, try grilling your corn on the cob rather than boiling it for a fresh and delicious new taste. This recipe is simple and just taste a few minutes to prepare (and 20-30 minutes on the grill). 
     
    Ingredients
    • 6 ears of corn, husked and cleaned
    • 1 stick of butter
    • 3 tablespoons roasted, minced garlic
    • Salt and pepper to taste

    Directions
    • Preheat your grill to medium heat.
    • Cut 6 pieces of aluminum foil – each one large enough to completely wrap 1 ear of corn.
    • Place 1 ear of corn on each sheet of foil.
    • Coat each ear of corn in butter.
    • Sprinkle the roasted, minced garlic evenly over the ears of corn.
    • Sprinkle salt and pepper over the ears of corn if desired.
    • Wrap the ears tightly in the foil and place them on the grill.
    • Grill for 20-30 minutes (turning occasionally) or until kernels are tender.

    Substitutions and Pro Tips
    • I run the stick of butter directly over all sides of the ears of corn in this recipe. Alternatively, you can add approximately 1 tablespoon of butter to each ear. 
    • You can also cook this in the oven – at 350 degrees F (175 C)
    • Substitute spray / low-cal butter for the standard butter
    • Substitute 2 tablespoons garlic powder for the fresh garlic – although the fresh tastes SO much better.
    • Add a sprinkle of sugar to each ear of corn (along with the butter and garlic) before grilling.
    • Wrap each ear of corn in bacon before grilling.
    • You can also grill the ears of corn directly in the husk and add the butter, garlic, salt and pepper afterwards.
