    BLT’s are a classic and they have been a favorite of mine since I was little. They remind me of my father. He would always make them for me on weekends or holidays. 

    I’m putting a twist on this classic. I’m a California girl, born and raised in San Diego. In the county of San Diego is the avocado capital of the world so Californian’s find any excuse to use the green jewel. My mother made all of our baby food. She told us that our favorite was an avocado banana whip. Go Figure.

    If you haven’t guessed yet he twist on the BLT is avocado. But that’s not all. I’m going to add a little kick as well. We are quite close to Mexico after all.

    OK Let’s get down to business.

    Ingredients
    • One hass avocado
    • One roma tomato 
    • Two slices of whole wheat bread 
    • Two slices of bacon
    • One tablespoon of olive oil based mayo
    • One teaspoon of chipotle seasoning

    Ok so I have a few tips before we begin. The whole wheat bread that I prefer is Rudi’s. It’s organic and delicious. For bacon, I really like Wellshire’s dry rubbed center cut. The pieces are thick and juicy and they are apple wood smoked.

    OK so the first thing you want to do is prepare your chipotle mayo. This is where the kick comes in. Simply mix the mayo and chipotle seasoning in a small ramekin. Set that aside until you’re ready to spread it on the toast.

    Now you want to prepare the bacon. Simply cook it in a pan. You don’t need to add any oil. The bacon will create its own. While the bacon is cooking you can put the bread in the toaster. If you don’t have a toaster you can put the bread on your stovetop and flip it to get both sides. Slice your avocado in half, you will probably only need one side. Cut your tomato into medium slices. Once your toast is ready spread your chipotle mayo on one side, add a few tomato slices, then the bacon, then the avocado and cover with the other slice of toast. Enjoy!

    You can alter this recipe any which way you please. For a protein packed version add an egg!

  • How to make Sandwich Pie

    Use white bread that has been baked in round pie-pans with baking powder rather than yeast so that it is not too porous. De-crust when cool, preferably with a grater, and allow it to stand overnight. Brush the exposed sides with milk if too dry, and slice in thicknesses equivalent to the layers of an ordinary layer-cake.

    Make Maitre d’Hotel butter by adding the juice of half a lemon, a pinch of pepper, and a dessert-spoonful of finely minced parsley to 3 1/2 ounces of butter and mix thoroughly. Spread as much as is needed on the lowest layer of bread and top with minced roast beef.

    Butter the under side of the second layer with Maitre d’Hotel butter and on the reverse apply a mixture of mustard and butter and top with minced ham.
     
    Cover with the third layer the under side of which has been spread with mustard-butter. Top with pure butter and Dutch cheese, either grated or in slices, and cover with the fourth layer, buttered side down.

    Dissolve over steam a generous dessert-spoonful of butter with the yolks of three eggs, add pepper and salt to taste, and cook until the mixture attains the consistency of custard. Pour over the pie, being careful to see that the top and sides are entirely covered, as when icing a cake. When cold and firm, garnish with slices of hard-boiled eggs. A small lettuce leaf under each slice of egg might add interest.

    Instead of the butter-egg spread you can use a firm mayonnaise. This is made by adding 3 ounces of gelatine dissolved in four dessert-spoonfuls of boiling water to 2 eggs and half a bottle of salad oil. Do not combine the gelatine with the mayonnaise unless it is to be used at once.

    Slice the pie as you would a layer-cake and serve

    Garnishes and inside sandwich paste can be varied according to what you prefer or what you have available.

    Ingredients:

    • Bread slices 36
    • Amul Butter 1\2 cup

    For 1st layer:

    • Onion 1 chopped
    • Grated Cheese 1 cup
    • Green Chillies 2 chopped
    • Coriander Leaves 2 tablespoon
    • Salt to taste

    For 2nd layer:

    • 1 Tomato chopped
    • Cabbage 1\2 cup
    • 2 tablespoon Cheese Spread
    • Mashed Boiled Peas 1\2 cup
    • Mashed Boiled Carrots 1\2 cup
    • Salt to taste

    Method:

    1. Mix all the ingredients for the 1st layer.
    2. Mix all the ingredients for the 2nd layer.
    3. Apply butter on one side of the bread slices.
    4. Take one slice and spread the mixture of the 1st layer.
    5. Place the 2nd slice on top. Spread the mixture of the second layer.
    6. Place the second layer. Place the third layer.
    7. Heat the toaster. Put the sandwiches. Lightly toast for 3 - 4 minutes.

    Serve hot with Ketchup and French Fries.
