    Caramel Apple Pie

    Surprisingly easy, outrageously delicious. It is hard to overstate how incredibly good this apple pie is. And with apples in season, it’s hard to need an excuse to make this incredible treat. Did you stretch out your roommate’s new shirt? Bake her a pie. Want to end the ongoing war with the people in the apartment next to you? Pie them. There is nothing this apple pie cannot fix. Don’t be lazy, make the crust yourself; it’s surely the best part.


    Crust Ingredients
    • 1 cup unsalted butter - chilled in the fridge and cut up into smallish pieces
    • 2 ½ cups flour
    • ½ tsp salt
    • 7 tablespoons ice water
    • 1 tablespoon apple cider vinegar - gives the crust a heavenly texture
     
    Crust Directions 

    1. Mix up flour, salt, and butter in a medium bowl with your hands. No need to overdo it; combine until the mixture resembles a clumpy sand.
    2. Mix up water and vinegar in a small bowl, and add ½ to the flour mixture. Combine, and then add the other half. Again, do not over-knead; once the mixture comes together, it’s done.
    3. Divide dough in half and form into a round disc a couple inches wide.
    4. With one half, press dough evenly into your pie tin. Wrap the other half in plastic wrap, and let them both refrigerate for 30 minutes. The remaining half will serve as the lattice on the top of the pie.

    Filling Ingredients

    • ½ cup white sugar
    • ½ cup brown sugar
    • ¼ cup water
    • ½ teaspoon cinnamon
    • 1 dash of salt
    • 5-6 granny smith apples, peeled, cored, and thinly sliced
    • 6 tablespoons butter
     
    Filling Directions 

    1. Preheat oven to 425 degrees Fahrenheit.
    2. Mix up butter, white sugar, brown sugar, water, cinnamon, and salt in a pan on medium heat. Bring to a boil, let cook for about a minute, and set to the side.
    3. Put apple slices in your prepared piecrust.
    4. With the remaining half of your dough, flatten with the rolling pin and slice into 8-12 strips. Weave them into a lattice pattern on top of the pie - over, under, over, under. Don’t leave your strips too tightly, make sure there is space to see the apples beneath, Seal the strips to the crust by pinching them.
    5. Pour the sugar mixture over the pie, coating the lattice crust and dripping down between the strips to the apples below.
    6. Bake in the preheated over for about 15-20 minutes, then reduce heat to 350 degrees and let bake for about another 35-40 minutes until the crust is golden brown and the apple filling is bubbling. 
    7. Let cool and serve with vanilla ice cream or whipped cream.

    Oh My, Pecan Pie

    This pecan pie is made without corn syrup so it’s got a more authentic taste. Give it a try and end this night with some extremely thankful guests. You won’t believe that incredible pecan pie is as easy as three steps!
     
    Ingredients 
    • 1 tablespoon flour
    • ¼ cup white sugar
    • 1 cup light brown sugar
    • ½ cup butter
    • 2 eggs
    • 1 tablespoon milk
    • 1 tsp vanilla extract
    • 1 cup chopped pecans
    • One 9-inch pie shell


    Directions

    1. Preheat the over to 300 degrees
    2. Beat eggs until foamy, and mix in melted butter, brown sugar, white sugar, and flour.
    3. Once well mixed, add the vanilla, milk, and pecans.
    4. Pour mixture into an unbaked 9 inch pie shell.
    5. Bake in preheated oven for about an hour, or until the top is a little crackly and the interior is done.

    Pecan Heaven Bars 

    Or, you can try these amazing pecan bars. They are a similar idea but you get to make the crust! These take a little more time, but they are oh so divine

    Ingredients (Crust)
    • ¾ cup cold unsalted butter, cubed
    • 2/3 cup brown sugar
    • 1 ½ cups flour
    • 1 tsp salt

    Ingredients (Filling)
     
    • 1 cup brown sugar
    • ½ cup softened unsalted butter
    • dash of salt
    • 1/3 cup light corn syrup
    • ¼ cup flour
    • 3 cups chopped pecans
    Directions 
     
    1. Preheat over to 350 degrees
    2. Cover a 13x9 in baking dish with aluminum foil, letting a few inches overhang the sides. Coat the foil in butter.
    3. With a hand or electric blender/mixer, blend the flour, sugar, butter, and salt for the crust until it looks like coarse salt. Add 2 tablespoons cold water and mix the dough just until it holds. Cover the tinfoiled dish in the dough and bake in the oven until the gold brown, around 20-30 minutes.
    4. While your crust is baking, you can mix up the filling! With you mixer, combine brown sugar, salt, and butter, on a medium level speed for around 3 minutes, until the mixture is fluffy.
    5. Add corn syrup, flour, and pecans and mix just until they are thoroughly combined.
    6. Spread the filling over the baked crust and bake again, until golden brown. 7. Remove from oven and let your bars cool completely before removing then from the pan.

    My sister said it best: A thanksgiving without pumpkin pie is just a Thanksgiving I don’t want to be a part of. There’s just something about that amazing creamy texture and medley of fall flavors that makes us all thankful to be alive and eating pie.

    We all know that making pumpkin pie is super easy and that the results will be tastier than anything you’re going to buy at the store. This recipe one-ups the one on the back of the pumpkin puree can by a long shot, and yields an incredible flavor that totally justifies the extra time and effort that the recipe entails.

    Makes one, 9 inch pie

    Ingredients
    • 1 cup heavy cream
    • 1 cup whole milk
    • 3 large eggs AND 2 large yolks
    • 1 tsp vanilla extract
    • 1 15oz can of pumpkin puree
    • 1 cup candied yams or canned yams
    • ¾ cup sugar
    • ¼ cup maple syrup
    • ¼ tsp ground nutmeg
    • 1 tsp fine ground sea salt
    • 1 pie crust
     
     
    Directions
     
    Preheat oven to 400 degrees. Put the rack to the lowest position and place a baking sheet on the rack.

    Mix cream, yolks, eggs, milk, and vanilla together in a bowl and put to the side.

    Mix pumpkin puree, yams, sugar, maple syrup, ginger, cinnamon, nutmeg, and salt in a saucepan and bring to a simmer, bubbles bursting slightly, which should take about 5-7 minutes. Let the mixture simmer more, stir constantly and mush yams against the sides of the pot so that they become creamier. Let cook for 10-15 minutes, until the mixture is thick and shiny.

    Take the pan off the burner and whisk in the cream mixture you had set aside. Strain through a mesh strainer, using a spoon to press the chunks through the strainer. Whisk again, repeat if necessary.

    Put crust in a pie plate, place on preheated baking sheet. Pour the pumpkin mixture into the crust and let it bake for about 10 minutes. Leaving the pie in the oven, turn the heat down to 300 degrees and let bake for another 20 to 30 minutes, or until the edges are set. Remove from the oven and set on a cooling rack, and the pie will finish baking with the residual heat. Let sit for at least 2 hours and then cut and serve at room temperature or chilled. Don’t forget the whipped cream!

    Ingredients

    • 2 1/4 cups flour
    • 2 1/2 teaspoons baking powder
    • 1 teaspoon salt
    • 2/3 cup butter or margarine, softened
    • 1 cup brown sugar
    • 3/4 cup white sugar
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 1 1/4 cups whole milk
    • 24 small chocolate eggs, unwrapped

     Directions

    •  Preheat oven to 350 degrees F (175 degrees C)
    • Grease 24 muffin cups or place 24 paper liners into muffin tray.
    • Sift together: flour, salt, and baking powder into a small bowl and set aside.
    • Cream together: brown sugar, white sugar and margarine (or butter) until light and fluffy. 
    • Add eggs to the cream mixture - one at a time.
    • Add vanilla to cream mixture.
    • Add flour mixture and milk to the cream mixture - adding a little at a time and alternating between the two. Do not over-mix.
    • Fill the muffin cups about 1/3 full, then add a chocolate egg in the middle of the muffin cup.
    • Add more of the muffin mixture until each cup is about 2/3 full.
    • Bake in preheated oven for approximately 18 to 20 minutes or until muffins are golden brown.

     Pro Tips

    •  Decorate with additional chocolate eggs, Peeps, and other candy
    • Allow cupcakes to cool completely before frosting them, as hot cupcakes can quickly melt frosting and other candies
