Zanzibar is called The Spiced Island, with its cloves and cinnamon, nuts, cocoa beans and coconut. It is a tiny island which makes up part of the East African republic of Tanzania. Zanzibar cuisines have borrowed from food traditions of its visitors, from the Indian sub-continent (Pakistan inclusive) to Arabs and Persians, but many years of experimenting with available ingredients have given Zanzibar's their own dishes.
Leftover halibut, flounder, haddock, or any mild fish is excellent for these yummy croquettes. Canned tuna or salmon are also good.The croquettes should not be deep-fat fried but lightly sauteed in butter.
