Asparagus is very easy to prepare and you can put them into stir fries, barbecues, and serve them warm or cold, microwave and roasted. Asparagus is called ‘King of vegetables' for a reason and this is why!
Ingredients
- 2 bunches asparagus, woody ends removed
- 1 bag ready washed baby rocket leaves
- 16 grape tomatoes halved lengthways
- 100g thinly sliced prosciutto
- 1/2 cup freshly shaved Parmesan cheese
- 2 tbsp extra virgin olive oil
- Cracked black pepper
Method

Pre heat the grill and grill the prosciutto until crispy. Drain on kitchen paper absorb any excess oil.

Grill the asparagus for 4-5 minutes, turning frequently to prevent charring. In a large bowl toss together the baby rocket, halved grape tomatoes and asparagus in the extra virgin olive oil.

Season with cracked black pepper. Top the salad with crispy prosciutto and parmesan and serve immediately.
