A delicious vegetarian meal! Serve with a green salad and crusty rolls.
Ingredients
- 8 - 12 large mushrooms
- 1 cup crumbled feta (enough to fill each mushroom cap)
- 1/4 cup grated parmesan (fresh or packaged)
- 1 cup italian dressing
- 1 cup balsamic vinegar
Method
- Wash mushrooms and pull out stems. Place mushrooms face down in a skillet, pour italian dressing and balsamic vinegar over mushrooms and make sure they are coated.
- Saute for about 5 minutes on medium high, flip mushroom caps over and fill with feta. Spoon some of the excess dressing over the filled mushrooms.
- Saute for about 5 more minutes, reduce heat to medium, sprinkle parmesan cheese over the stuffed portion of the mushroom and spoon some more of the excess dressing over the mushrooms.
- Turn on low and let cook for a few minutes and serve.
