    A delicious vegetarian meal! Serve with a green salad and crusty rolls.

    Feta Stuffed mushrooms


    Ingredients

    • 8 - 12 large mushrooms
    • 1 cup crumbled feta (enough to fill each mushroom cap)
    • 1/4 cup grated parmesan (fresh or packaged)
    • 1 cup italian dressing
    • 1 cup balsamic vinegar
    Method
    1. Wash mushrooms and pull out stems. Place mushrooms face down in a skillet, pour italian dressing and balsamic vinegar over mushrooms and make sure they are coated.
    2. Saute for about 5 minutes on medium high,  flip mushroom caps over and fill with feta. Spoon some of the excess dressing over the filled mushrooms.
    3. Saute for about 5 more minutes, reduce heat to medium, sprinkle parmesan cheese over the stuffed portion of the mushroom and spoon some more of the excess dressing over the mushrooms.
    4. Turn on low and let cook for a few minutes and serve.
