Brioche au chocolate

This is a fantastic French recipe ideal for winter days and also for chocoholics. The classic, buttery brioche is delicious enough on it own, but when you add chocolate elevate them to sumptuous new heights.

Ingredients

Method 

1. Place flour, eggs, sugar, salt and yeast in mixer with a dough hook attachment.
   
2. Mix on low speed until dough separates from the sides of bowl and clings to the hook.
3. Add butter slowly into dough while mixing on low speed, until all butter is incorporated. This should take about 20 minutes.
   
   Add chocolate chips and mix gently until they are evenly distributed.
4. Place dough in an oiled container, cover with moist tea towel and leave to rest in the fridge for at least 40 minutes, or overnight.
5. Shape dough into 60g buns and arrange on a greased tray. Cover with a moist tea towel and leave to rise for two hours, or until doubled.
6. Brush bun tops with beaten egg and bake at 190C for 10 minutes.
7. For a different flavour, use praline or dried fruit instead of chocolate
