Avocado Lime Pie


Avocados are a treasure of nutrients. They contain more than 25 essential vitamins and minerals. Avocados are one of the few fruits that have monounsaturated (good) fats, making them an excellent part of a low to moderate fat diet, when they are consumed in place of foods containing saturated fats. Like other fruits and vegetables, avocados provide satiety because of their water and fibre content. This increases the feeling of fullness and can be used as part of an effective weight loss/weight management plan.
Avocado Lime Pie



Ingredients
  • 1 cup sieved avocado pulp.
  • 1 (14 ounce) can sweetened condensed milk.
  • 1 teaspoon grated lime zest.
  • 1/2 cup fresh lime juice.
  • 2 egg yolks.
  • 1 pinch salt.
  • 1 recipe pastry for a 9 inch single crust pie.

Method
  1. Combine sweetened condensed milk, lime zest,
  2. lime juice, lightly beaten egg yolks, and salt; blend until mixture thickens. Stir in avocado pulp. Pour filling into pie shell.
  3. Chill pie for several hours. Garnish with whipped cream, and serve.
