1. Preheat oven to 450?F.
2. Place chestnuts in cold water; discard those that float.
3. Dry and slit each shell 1/2 to 3/4 inch on each side.
4. Place in a saucepan, add oil and shake pan over heat for five minutes.
5. Roast in oven for another five minutes.
6. When cool enough to handle, remove shells and brown skin underneath with a sharp paring knife. Enjoy!
