Yo-yo biscuits made in 5 minutes!


I'm not much of a dessert person really, much more of a savory but when I get the urge I must have sweet things immediately! I really enjoy this biscuits, they are very easy to make because you are using amaretti biscuits that you can find in any delicatessen, and by just add ?the almond mixture in the middle you have a scrumptious dessert in no time.

Ingredients

  • 1 tablespoon flaked almonds
  • 1/2 cup pure icing sugar, sifted
  • 1/2 teaspoon vanilla essence
  • 125g packet amaretti biscuits

Method

  1. Place almonds in a small non-stick frying pan over medium-high heat. Cook, stirring often, for 2 to 3 minutes or until almonds are toasted. Place in a food processor. Process until roughly chopped.
  2. Using a wooden spoon, mix toasted almonds, icing sugar, vanilla and 2 teaspoons hot water in a small bowl until a thick paste forms (extra hot water may be needed).
  3. Sandwich biscuits together with 1 teaspoon almond mixture. Serve and enjoy with a friend and a cup of tea
