Fried polenta makes for an excellent breakfast substitute for pancakes or waffles and can be topped with syrup, jam or even just butter. Also you can used as a side dish.

Bring stock to the boil over medium heat and whisk in polenta.

Add parmesan, salt and pepper and cook, stirring for about 3 minutes or until mixture leaves the sides of the saucepan.

Place polenta on a greased and plastic wrap-lined tray. Spread to 1.5cm thickness.

Smooth top and cool in the fridge. Cut into finger-sized pieces.

Shallow fry in hot oil until golden. Drain on paper towel and season with salt.
