Dough
Ingredients
3 cups all purpose flour 1 egg (this will be beaten) 1 cup of lard 4 tablespoons of water.
Method
- Mix the flour and lard together.
- Mix the egg thoroughly with a fork (or a mixer).
- Stir the egg in to the flour and lard mixture. Mix it in to a dough.
- Begin to add the water slowly, one spoonful at a time. Continue until you have a soft dough.
- Knead the dough until it is soft Let the dough sit for 25-35min.
Empanada filling
Ingredients
2 cups roughly grated cheese (mozzarella is best) 2 eggs separated 1 - 1/2 tablespoon flour Salt and nutmeg to taste.
Method
- Beat egg yolks until yellow colored, add spices and fold in flour.
- Beat egg whites till stiff peaks form, add salt and let sit.
- Blend grated cheese into egg yolk mixture, and then carefully fold in egg whites.
- Place fillings by tablespoonfuls into dough rounds. Fold over and seal, bake in very hot oven until brown.
- Serve hot and enjoy with friends!
