The best carrot cake, is a sweet cake with grated or pure carrot mixed into the batter. The carrot softens in the cooking process, and the cake usually has a soft, dense texture. The carrots themselves enhance the flavour, texture and appearance of the cake.
Ingredients

12 oz of carrots (boiled and puree)

1 tbls butter

3 cups of sugar

4 egg yokes

1 tbls lemon or orange zest
-
2 tbls flour
-
2 tbls of corn starch
-
½ tsp baking powder

4 egg whites

Sugar and cinnamon to taste
Method

Preheat the oven to 350 F. Boil the carrots until soft and puree. A ricer or potato masher works very well for this. Add the butter, sugar, 4 yolks and lemon or orange zest to the carrots and mix well.

To this mix add the flour, corn starch and baking powder and mix well.

Beat eggs whites until stiff peaks. Fold the whites in to the mix. Poor the cake mix in a buttered and floured pan and bake. Cook time 40 to 45 minutes.

Let cool down and sprinkle with sugar and cinnamon.
