A recipe that is just perfect when you are on the run, and makes a delicious sandwich. If you do not like turkey you can substitute it with any meat you like.
Ingredients

2 slices French or Italian loaf bread, lightly toasted

1 1/2 teaspoons mayonnaise

1/2 teaspoon Dijon mustard

Several slices of cooked turkey breast

2 Tbsp prepared cranberry sauce or cranberry relish

1 handful of baby arugula leaves or watercress
Method

Toast 2 slices of bread. Spread mustard on one slice, mayonnaise on the other.

To the slice with mustard, add the turkey breast, then the cranberry sauce, then the arugula leaves. Top with the other slice of bread.
