Using fennel for salads


Fennel is used extensively in Italian cooking. It is often served as a hot vegetable or eaten raw in salad. The seed are also used in spiced meats. A taste of Italy!

Fine shavings of fragrant aniseed-flavoured fennel add flavor to winter salads. To prepare them perfectly, use this handy three-step guide.

Step 1: Wash the fennel bulb. Use a sharp knife to remove feathery leaves from the top. Remove and discard any tough outer layers.

Step 2: Use a vegetable peeler to slice the fennel bulb lengthways, from the base to the top of the bulb, to make fine shavings of fennel.

Step 3: To curl the shavings and make them crisp, place the fennel in a bowl of iced water for 10 minutes. Drain, and then add raw to salads.
