Ingredients

Olive oil

2 onions, finely chopped

2 cloves of garlic, minced

1 can of plain tuna, drained (150 g / 5 oz.)

5 green olives, sliced

1 small can of tomato paste

1/2 green pepper, diced

400 ml (1 1/2 cups) partly skimmed milk
-
100 g (3 1/2 oz.) quick tapioca
-
200 ml (3/4 cup) cream
-
1 egg
-
Salt and pepper
Method

Preheat the oven to 180° C (350° F). Butter a baking dish.

In the olive oil, sauté the onion, garlic, flaked tuna, olives, tomato paste and green pepper for 10 minutes. Season.

Cook the quick tapioca in the milk as directed on the box, stirring constantly.

Cool to lukewarm.

Whisk in the cream and egg.

Stir in the tuna-vegetable mixture. Pour into the baking dish.

Cook in a water bath for 40-45 minutes.

Cool slightly; serve warm, accompanied by some lettuce leaves.
