Yummy Recipes for Easter - Enjoy!


Easter is the time to celebrate and party. So you must be wondering what to cook special for the party. Check out some yummy recipes to surprise your friends and family.

Easter recipes

We all know bunny is symbolic and very auspicious for Easter, so how you like the idea of making Easter Bunny Cake:

Ingredients

  • 1 box Betty Crocker cake mix.
  • Carrot cake
  • Water, vegetable oil and eggs called for on cake mix box
  • Tray or cardboard, covered with foil
  • 1 container Betty Crocker Whipped fluffy white frosting
  • 1 cup shredded coconut
  • Construction paper
  • Jelly beans or small gumdrops
  • 1 cup shredded coconut
  • Green Food Color

Method

  1. Heat oven to 350F (170C) Make and cool cake as directed on box for two 8-inch or 9-inch round pans.
  2. Reserve 1 layer for another use or to make a second bunny. Cut 1 layer in half. Put halves together with frosting to form body. Place cake upright on cut edge on tray.
  3. Cut out a notch about one-third of the way up one end of body to form head (small end) as shown in diagram.
  4. Attach half of cutout piece from tail with toothpicks. Frost with remaining frosting, rounding body on sides. Sprinkle with 1 cup coconut.
  5. Cut ears from construction paper; press into notch on top. Use jelly beans for eyes and nose.
  6. Shake 1 cup coconut and 3 drops food color in tightly covered jar until evenly tinted. Surround bunny with tinted coconut. Add additional jelly beans if desired. Store loosely covered.

 

If you want to serve some meat, try Easter Ham:

Ingredients

Easter ham

  • 1 whole bone-in ham
  • 12 ounces pineapple juice
  • 2 cups packed brown sugar
  • 1 cup water
  • 1/2 teaspoon ground cloves

Method

  1. Place ham in roasting pan.
  2. In saucepan, bring remaining ingredients to a boil.
  3. Pour over ham.
  4. Bake, uncovered at 350°F for 2 to 2-1/2 hours, basting occasionally. 
  5. Cover with a foil tent if ham is getting too brown.

Easter Soup: Any meal is incomplete without soup, so make this as a starter for your guests.

Ingredients

  • 2-3 smoked kielbasa (Polish sausage)
  • 2 quarts water, (8 cups)
  • 2 tablespoons white vinegaror lemon juice
  • 1 tablespoon prepared horseradish
  • 2 tablespoons flour
  • 1 cup heavy cream
  • salt and pepper
  • Hard-boiled egg

  1. Add kielbasa and water to a large pan, bring water to a boil, reduce heat and simmer 40 minutes.
  2. Remove the sausage and refrigerate both sausage and cooking liquid overnight.
  3. Next day, remove the fat from the liquid, add the vinegar and hoseradish.
  4. Mix the flour and cream and add to the pan.
  5. Season with salt and pepper and bring to a boil.
  6. Reduce heat and simmer 10 minutes.
  7. Allow kielbasa to return to room temperature or rewarm and slice it.
  8. Serve hot broth with sliced kielbasa and eggs.

Zesty Vegetarian Chilly

  • 1-package Yves Meatless Ground Round
  • 3-4 cloves chopped garlic
  • 1-can Chili Beans
  • 1-can Black Beans (drained and rinsed)
  • 1-can Pinto Beans (drained and rinsed)
  • 1-medium chopped onion
  • ½-red bell pepper chopped
  • ½-green bell pepper chopped
  • 1-can condensed tomato soup
  • 1-cup water or vegetable broth
  • 1-can diced tomatoes
  • 1-teaspoon cumin
  • 1-tablespoon chili powder
  • Salt and pepper to taste

Method

  1. Add all ingredients to a medium soup pot and simmer for 20 minutes or until heated through and serve.
  2. Don't hesitate to experiment with different spices and beans of your choice.

Easter Egg Nests: We all know the importance of eggs on the eve of Easter, so here is one you can make at home.

Ingredients

  • 6 oz good-quality dark chocolate roughly chopped
  • 4 oz Rice Krispies (Kellogg's Rice Krispies® are cereal available from the market and they are also known as Rice Bubbles in Australia)
  • 72 mini chocolate eggs
  • Cupcake papers or ring molds

Method

  1. Melt the chocolate in a heatproof bowl over a saucepan of hot water. Bring just to a boil, turn off of the heat and allow the chocolate to melt in the bowl.
  2. Stir in the Rice Krispies.
  3. Spoon the mixture into cupcakes cases. Flatten a little and make a well in the centre.
  4. Fill each one with three speckled mini chocolate eggs.
  5. Allow to set and then enjoy!

How can one think Easter meal without Easter Pie?

Ingredients

  • 2 cups all-purpose flour
  • 1 cup dairy-free margarine
  • 1/4 tsp. sugar
  • 1 1/4 tsp. salt
  • 1/4 cup water
  • 1 lb. vegetarian sausage, crumbled
  • 2 lbs. firm tofu, crumbled
  • 1/4 cup soy Parmesan cheese
  • 1/4 cup minced fresh parsley
  • 1/2 tsp. fresh ground pepper
  • 1/4 tsp. cayenne
  • 1/4 tsp. paprika
  • 1/4 tsp. ground fennel seeds

Method

  1. Preheat the oven to 350°F.
  2. In a food processor, combine the flour, margarine, sugar, and 1/4 tsp. of salt. With the machine still running, add the water to form a dough ball.
  3. Divide the dough into two balls and set aside.
  4. In a large bowl, combine the vegetarian sausage, tofu, soy Parmesan, parsley, remaining salt, pepper, cayenne, paprika, and fennel seeds.
  5. Roll out the dough into two 11-inch circles. Place one circle in a 10-inch pie plate and spread the filling mixture over it. Cover with the other dough, pinch the edges, and prick the center with a fork.
  6. Bake for 1 hour, or until golden brown.
