Healthy cranberry cookies


Cranberries are round or oblong in shape and small, usually about 1/2 inch long. Their skin is smooth and shiny, and the color varies from bright to dark red.  Cranberries have moderate levels of vitamin C, dietary fiber and the essential dietary mineral, manganese, as well as a balanced profile of other essential micronutrients. So why not try this recipe where you are able to make for your family healthy and tasty cookies.

Ingredients

  • 100 g of cranberries chopped
  • 5 ml Orange Rind (grated)
  • 250 g Apples (pared and chopped)
  • 200 g Flour
  • 5 ml Baking Powder
  • 5 ml Cinnamon
  • 120 g Butter
  • 200 g Brown Sugar
  • 150 g Sugar
  • 1 Egg
  • 60 ml Milk
  • Salt

Method

  1. Mix butter and sugars.
  2. Combine egg and milk.
  3. Beat them well and keep aside.
  4. Sift flour, baking powder, cinnamon and salt together.
  5. Stir into butter mixture till blended well.
  6. Stir in cranberries, orange rind and apple.
  7. Drop it onto baking sheets.
  8. Bake it in a preheated oven at 190 degrees C for 12-15 minutes.
