Streusel Apple Tart


The German word streusel means something scattered or sprinkled. Some modern recipes add various spices and occasionally chopped nutmeats. Although the topping is of German origin, it is sometimes referred to as Danish or Swedish. This apple tart is a fantastic dessert for any party, or to enjoy with a cup of tea.

Ingredients 

  • 225g/8oz Shortcrust Pastry
  • 50g/2oz Butter
  • 75g/3oz Brown Sugar
  • 75g/3oz Plain Flour
  • 8 Granny Smith Apples, cored and sliced
  • 1 tbsp Lemon Juice
  • 1 teasp Ground Cinnamon
  • 50g/2oz Sugar

Method

  1. Preheat the oven to 220C, 425F, Gas Mark 7. Roll the pastry out to 6mm/1/4-inch and use to line a deep 20cm/8-inch flan tin.
  2. For the topping: in a large mixing bowl, rub the butter into the flour with your fingertips until it resembles large breadcrumbs then stir in the sugar and mix well. Set aside.
  3. For the filling: in another large mixing bowl, toss the apples with the lemon juice, cinnamon and sugar then arrange over the pastry and scatter with the topping mixture.
  4. Bake for 15 minutes then reduce the heat to 190C, 375, Gas mark 5 and continue to bake for a further 30 minutes, covering the top with foil if it browns too quickly.
  5. Serve hot or cold with cream or ice cream.
