until firm. Place in a box or cellophane bag and decorate with a nice ribbon. She will love them because you made them!
INGREDIENTS
- 10 plain biscuits (such as Nice)
- 125g butter, softened
- 1/2 cup caster sugar
- 1/3 cup orange juice or sweet sherry
- 1/2 cup sultanas
- 2 tablespoons desiccated coconut
- 2 tablespoons cocoa powder
- 1/2 cup desiccated coconut, extra
Method
- Roughly
break biscuits and place in a snap-lock bag or large plastic bag
secured with a rubber band. Place on a chopping board or flat surface.
Using a rolling pin, gently smash and roll over biscuits until crushed
to fine crumbs. Alternatively, ask Dad or Mum to process biscuits in a
food processor for you.
- Using an electric mixer, cream butter and sugar in a large
bowl until pale. Add biscuit crumbs, orange juice or sherry, sultanas,
coconut and cocoa. Stir until well combined. Cover with plastic wrap.
Place in the fridge for 30 minutes or until mixture is firm enough to
roll.
- Place extra coconut on a plate. Using 2 teaspoonfuls of
mixture at a time, roll into small balls. Roll balls in coconut and
place on a large plate.
