Ricotta can be enjoyed in many ways. This recipe is very easy to make and great for any party.
Ingredients
- 500g ricotta
- 1/3 cup grated parmesan
- 2 tbsp extra virgin olive oil
- Salt and pepper
- 4 slices sourdough bread
- 1 bunch rocket
- 2 ripe tomatoes, sliced
Method

In a bowl, mix together the ricotta, parmesan and oil. Season to taste.

Toast the bread. Drizzle with a little oil, spread on a thick layer of ricotta and top with rocket and tomato.

Season with a little salt, pepper and drizzle with oil again.
