Okra with crispy chorizo


Okra is traditional food eaten in Africa, this little-known vegetable has potential to improve nutrition, and it has a lot of fiber and vitamin C too. Try it!

Ingredients

  • 1 Dozen medium size Okra (cut in half)
  • 1 tbs olive oil
  • 2 garlic cloves (chopped)
  • 100g cooking chorizo (diced)
  • Sea salt / ground black pepper to taste

Method

  1. With the frying pan OFF the fire, put olive oil, chopped garlic and diced chorizo in it, then heat the frying pan on a very low fire.
  2. Let the ingredients fry gently for 5-7 minutes without the garlic burning.
  3. As soon as the chorizo is crispy add the okra.
  4. Increase the fire to medium high and stir.
  5. After 2-3 minutes (before the okra becomes sticky) remove the frying pan from the fire, season and serve.
