INGREDIENTS
8 ripe tomatoes, chopped
1 small red onion, finely chopped
1 tbs balsamic vinegar
4 fresh bocconcini balls, brained and sliced
6 shredded fresh basil leaves
1 long bread stick, cut
1 garlic clove, cut in half
METHOD
Combine tomato, vinegar, basil and onion in a bowl. Season and put aside.
Preheat grill on high. Spray bread with oil and rub each bread with garlic and place on serving dish.
Top bread with bocconcini and tomato mixture. Enjoy!!
