Chimichurri- the Argentinian sauce


This sauce is very popular in Argentina and is used to top any grilled/barbecued meat. The essential ingredients are garlic, parsley, oil and vinegar. For better results prepare at least 2 or 3 days ahead of time. Enjoy!

Chimichurri with Chili

Ingredients

  • 120ml/4fl.oz Olive Oil
  • 120ml/4fl.oz Red Wine Vinegar
  • 90ml/3fl.oz. Water
  • 3 tbsp freshly chopped Oregano
  • 3 tbsp freshly chopped Parsley
  • 2 Garlic Cloves, very finely chopped
  • 1/2 teasp Chili Pepper Flakes
  • Salt

Method

  1. Place all the ingredients in a blender and process until well blended relatively smooth.
  2. Cover and leave to stand for at least 2 hours at room temperature before serving.
