INGREDIENTS
2 1/2 cups of self raising flour (wholemeal can be used)
30 g butter
1 tablespoon caster sugar
Pinch of salt
3/4 cup milk
1/2 cup water (approx.)
METHOD
Sift the flour, salt and sugar into a bowl, rub in butter with fingertips.
Stir in milk using a knife and then enough water to form a dough.
Turn dough onto floured surface and kneed until smooth.
Press out dough with hand to 20 mm thickness and then cut into circles.
Repeat with remaining dough and place into greased tin.
Bake in very hot oven until brown (15 min).
Once slightly cooled serve with cream and strawberry jam.
