Yummy Apple, Pear & Pistachio Cake


Apples are plentiful through the year, so you can find them in many desserts served in any home, and together with pear and pistachio make a super delicious cake.

Apple-pear-pistachio cake

Ingredients

  • 4 apples, peeled, sliced
  • 180g butter, softened
  • 1 cup caster sugar
  • 1 teaspoon vanilla
  • 3 eggs, beaten
  • 1 1/4 cups self raising flour
  • 3/4 cup plain flour
  • 3 tablespoons milk
  • 1/4 cup finely chopped pistachio nuts
  • 3 tablespoons caster sugar, extra
  • 1 pear, unpeeled, thinly sliced

Method

  1. Cook apples with 1/4 cup of water in a covered saucepan for 10 minutes or until apple is soft. Allow to cool.
  2. Cream butter and caster sugar until light and fluffy, add vanilla. Add eggs gradually, beating well after each addition. Sift flours and add alternatively with milk, mixing thoroughly.
  3. In a small bowl, combine pistachio nuts and extra sugar, set aside.
  4. Spread 2/3 of the cake mixture into a lined 25cm spring form pan. Spoon on apple mixture and sprinkle with 1/2 the pistachio sugar, dollop the remaining cake mixture over the apple.
  5. Arrange pear slices on the top and sprinkle with remaining pistachio sugar.
  6. Bake in a preheated oven at 180 degrees C for 1 hour or until cooked.
  7. Enjoy with a cup of tea, while talking to friends.
