Delicious Mussel Fritters


Mussels are one of the easiest things to cook. If the shells are slightly open, give a gentle squeeze and they should close, this is a sign that they are a life, and a great one to eat. Scrub the mussels well to remove any gravel or shell and pull off the bears. Don't overcook them, as they tend to become tough. Delicious!

Ingredients

  • 3/4 cup cold water
  • 1 tspn pesto
  • 1 cup packet scone mix
  • 1 tspn hot chilli sauce
  • 1/2 tspn salt
  • 11/2 cups cooked mussels (about 1 kg in the shell)
  • Vegetable oil
  • Lemon wedges

Method

  1. Mix together scone mix, cold water, pesto, chilli sauce and salt.
  2. Add mussels and mix well until batter is smooth.
  3. Then fry spoonfuls of the batter in hot oil. Drain well on paper towels and serve with lemon wedges on the side. 
  4. Enjoy!
