Garlic, mustard and white wine help to flavor this delicious beef fillet. It is a fantastic choice for any family get together. Succulent!
Ingredients
- 1 small onion, finely chopped
- 2 cloves garlic, crushed
- 750g piece beef fillet
- 2 or 3 tablespoon white wine
- 2 tablespoons chopped parsley, 2 teaspoons seed mustard, coarsely ground pepper
- 3 tablespoons soft breadcrumbs
- 1 cup grated cheese Vintage Cheese
- 60g butter
Method
- Preheat oven to 200C.
- Melt half the butter in large frying pan. Fry onion and garlic over medium heat for 4 minutes until softened. Spoon into a bowl, set aside.
- Cut a pocket along the centre of the beef fillet, approximately 3cm deep. Season with pepper. Melt remaining butter in pan, brown beef on all sides. Pour in wine, cook 1 minute to deglaze pan. Remove beef onto a sheet of foil.
- Mix remaining ingredients into onion mixture. Fill the beef pocket with stuffing. Wrap up in foil loosely. Place on a tray and bake in preheated oven for 30-35 minutes for medium doneness or as desired.
- Stand for 10 minutes then cut into 8 slices. Serve with butter-tossed cooked potatoes, yellow squash and tossed mixed greens.
