Yummy sausage, tomato and ricotta pasta


Italian sausages, together with tomato sauce and ricotta make a tasty and pretty dish for lunch or dinner, all you need to do is a salad and presto!

Ingredients

  • 1 tablespoon olive oil
  • 500g fettuccine pasta
  • 500g Italian sausages
  • 250g cherry tomatoes, halved
  • 2/3 cup basil leaves, shredded
  • 100g ricotta cheese, crumbled
  • small basil leaves and olive oil, to serve

Method

  1. Cook pasta in a large saucepan of boiling, salted water, following packet directions.
  2. Meanwhile, heat oil in a non-stick frying pan over medium heat. Cook sausages for 10 minutes or until cooked through.
  3. Transfer to a plate. Cut into 2cm-thick slices. Add tomatoes to pan and cook for 2 minutes.
  4. Drain pasta, reserving 2 tablespoons cooking water. Return pasta and water to pan. Add sausage, tomato, shredded basil and salt and pepper. Toss over low heat until combined.
  5. Spoon pasta into bowls. Top with ricotta and basil leaves and season with pepper.
  6. Drizzle with extra oil. Serve and Enjoy!
