Bruschetta is a food whose origin date to at least the 15th century from central Italy. They are many variations, that include toppings with red pepper, vegetables, mozzarella, basil, beans and cured meat. It is usually served as a snack or appetizer. This recipe captures the flavors of ripe tomatoes, fresh garden basil and garlic.
Ingredients
- French style bread stick, cut into 8 thick diagonal slices
- 2 tbsp olive oil 1 clove garlic, cut in half
- 200g tub Olive Dip
- 2 medium ripe tomatoes,
- Diced 1/2 cup small basil leaves
- roughly torn Salt and freshly ground black pepper to taste
Method
- Preheat the grill to hot. Lightly brush one side of the bread with some of the oil.
- Toast the bread on both sides until golden and rub with the cut side of the garlic clove.
- Smear the bread with about 3/4 of the Olive Dip.
- Top with the tomato and basil. Season to taste with the salt and pepper and dollop with the remaining Olive Dip.
- Drizzle with the remaining olive oil and serve immediately.
