This is a great recipe that I want to share with you. It is colorful as well as flavorful. You can adjust the dressing to suit your taste and the vegetables according to what is in season. Serve it with home made garlic bread and enjoy it with friends.
Ingredients
- 1 red onion, thickly sliced
- 2 zucchini, thickly sliced
- 250g punnet cherry tomatoes
- 400g button mushrooms
- 2 cloves garlic, crushed
- 1 / 4 cup olive oil
- Salt and pepper, to taste
- 1 / 4 cup chopped basil
- 200g baby spinach leaves
- 2 tbs red wine vinegar
- 100g feta, crumbled, to serve
Method
- Place onion, zucchini, tomatoes, mushrooms, garlic and 2 tblsps of oil in a bowl.
- Season with salt and pepper. Toss to combine.
- Arrange in a single layer on a large oven tray lined with foil.?
- Grill for 8 minutes, or until tender, turning vegetables halfway through cooking.
- Place vegetables and any juices in a large bowl. Add basil, baby spinach, red wine vinegar and remaining oil. Toss to combine.
- Serve vegetable salad topped with feta.
Tip: Serve with garlic bread and here is how to make it.
- Thickly slice a small French stick without cutting all the way through.
- Combine 50g soft butter, 2 cloves crushed garlic and 1 tblsp chopped fresh basil.
- Spread mixture on one side of each slice. Wrap bread in foil.
- Cook in a hot oven (200C) for about 10 minutes, or until butter is melted.
