Yummy Pasta!

Pasta is every child's favorite. What all you can do to make it more special to see that extra smile on your kid's face. Try the combination of the sweet, tangy tomato sauce with the crunchy, buttery pine nuts and soft, oozing mozzarella makes a very special eating experience. This dish that is healthy too, rich in protein and carbohydrates. A simple green salad or raw cut-up vegetables served alongside is perfect. This pasta dish is easy and inexpensive to make.


Ingredients
• 1/4 cup extra-virgin olive oil
• 1 pound cherry tomatoes halved
• 10 fresh basil leaves roughly chopped, plus more whole leaves for garnish
• 1 clove garlic minced
• 1 pound dried short pasta (such as penne or campanelle)
• 15 small balls fresh mozzarella, halved
• 1/4 cup pine nuts, toasted
• 1/2 teaspoon sea salt

Method:
1. In a large saute pan, heat the oil over medium heat.
2. Add the tomatoes, basil, and garlic.
3. Cook until the tomatoes are soft, 15 to 20 minutes.
4. Remove from the heat.
5. Cook the pasta in a large pot of boiling salted water until al dente; drain well, then transfer the pasta to the saute pan with the sauce.
6. Add the mozzarella balls and toss to combine them with the tomato sauce and pasta.
7. Add the pine nuts and toss. Add the salt and mix again.
8. Serve immediately on a large oval platter, garnished with large basil leaves.

Chicken Wonton

Try this yummy Chicken Wonton. It's a great starter or snack for an evening party or in a friend get together.Even children love this.

Ingredients:
• 2 tablespoons finely chopped shallot
• 1 clove garlic, finely chopped
• 2 green onions
• 8 ounces ground chicken meat
• 3 tablespoons peanut butter or sesame paste
• 3 tablespoon shredded carrot
• 1 teaspoon green curry paste
• 2 tablespoons soy sauce
• 1 1/2 teaspoon granulated sugar
• 2 teaspoons lime juice
• Oil for deep-frying and stir-frying, as needed

Preparation:

  • Heat the wok over medium-high to high heat. Add 2 tablespoons oil, drizzling it down the sides of the wok. When the oil is hot, add the shallots, garlic and green onion.
  • Stir-fry briefly, then add the chicken meat and stir-fry on high heat until the chicken changes colour and is nearly cooked through. Stir in the remaining ingredients. Remove the wok from the burner and allow the mixture to cool.
  • Set out the wonton wrappers with a small bowl filled with water. Lay out 1 wonton wrapper, and place approximately 1 tablespoon of the chicken mixture in the middle.
  • Dip your finger in the water and run it along the edges of the wonton wrapper to wet. Take another wonton wrapper and place it on top in a way that forms a star shape. Continue with the rest of the mixture.
  • To deep-fry, heat 3 to 4 cups of oil between 360 and 375 degrees Fahrenheit. Deep-fry the wontons a few at a time, sliding them carefully into the wok so that the oil doesn't splatter.
  • Deep-fry until they turn golden. Drain on paper towels. Serve with Sweet and Sour Sauce or the dipping sauce of your choice.
To make it healthy and to reduce the fat and calories bake instead of deep-frying the filled wontons. Preheat the oven to 350 degrees Fahrenheit (about 175 degrees Celsius). Spray 2 9 X 13 inch baking sheets with non-stick cooking spray (such as Pam).

‘Cordon Bleu' is a French term, literally translated as 'blue ribbon' that originally referred to an award for culinary excellence given to women cooks! It's healthy too.Nutritional value: Amount Per Serving Calories: 584 | Total Fat: 40.9g | Cholesterol: 195mg. 

Ingredients
• 6 skinless, boneless chicken breast halves
• 6 slices Swiss cheese
• 6 slices ham
• 3 tablespoons all-purpose flour
• 1 teaspoon paprika
• 6 tablespoons butter
• 1/2 cup dry white wine
• 1 teaspoon chicken bouillon granules
• 1 tablespoon cornstarch
• 1 cup heavy whipping cream

Directions
1. Strike chicken breasts if they are too thick. Place a cheese and ham slice on each breast within 1/2 inch of the edges. Fold the edges of the chicken over the filling, and secure with toothpicks. Mix the flour and paprika in a small bowl, and coat the chicken pieces.
2. Heat the butter in a large skillet over medium-high heat, and cook the chicken until browned on all sides. Add the wine and bouillon. Reduce heat to low, cover, and simmer for 30 minutes, until chicken is no longer pink and juices run clear.
3. Remove the toothpicks, and transfer the breasts to a warm platter. Blend the cornstarch with the cream in a small bowl, and whisk slowly into the skillet. Cook, stirring until thickened, and pour over the chicken. Serve warm.

Yummy Chicken Wings

If you are a Chinese lover, chicken wings must be one of your favourite. But every time you feel the temptation you cannot go to have Chinese. What if, you can cook the same yummy chicken wings at home and surprise all your friends and family.


Ingredients:

  • 12 chicken wings -- whole
  • 1 cup water-chestnut flour
  • 4 cups peanut oil for deep-frying

Marinade:

  • 1/2 teaspoon freshly grated ginger
  • 1/8 cup light soy sauce
  • 1/8 cup dry sherry or Chinese rice -- wine
  • 1/2 teaspoon five-spice powder

Method:

  • Cut each wing into 3 logical pieces.
  • Save the tips for soup and use only the 2 meatier parts for this recipe.
  • Prepare the marinade and marinate the wing pieces for 1/2 hour.
  • Drain and toss in the water-chestnut flour.
  • Deep-fry at 360F until golden brown, about 5 minutes.

Ingredients:
• 1 Pound seashell pasta
• 1/4 Pound pepperoni sausage, chopped
• 1/2 Pound asiago cheese, diced
• 1/4 Pound genoa salami, chopped
• 1 Can black olives, drained and chopped
• 1 Red bell pepper, diced
• 3 Tomatoes, chopped
• 1 Green bell pepper, chopped
• 1 Package dry Italian-style salad dressing mix
• 1/4 Cup balsamic vinegar
• 2 tbsp Dried oregano
• 1 tbsp Grated parmesan cheese
• 1 tbsp Dried parsley
• 3/4 Cup extra virgin olive oil
• Salt and ground black pepper to taste

Method:
• Take a large pot of salted boiling water and add pasta to it.
• Cook it properly then drain and cool it under running water.
• Take a large bowl and combine pasta, salami, asiago cheese, black olives, pepperoni, red bell pepper, green bell pepper and tomatoes in it, mix well.
• Stir in the envelope of dressing mix and cover it.
• Place it into the refrigerator for about one hour.
• Whisk together the olive oil, oregano, parsley, Parmesan cheese, vinegar, salt and pepper to prepare the dressing.
• Pour dressing over the salad, mix well and serve.

Here is a great idea of interesting snacks for your child. Even you can enjoy this yummy sandwich with your kids. It's not only tasty but healthy too.

Ingredients:

• Bread slices 36
• Amul Butter 1\2 cup

For 1st layer:

• Onion 1 chopped
• Grated Cheese 1 cup
• Green Chillies 2 chopped
• Coriander Leaves 2 tablespoon
• Salt to taste

For 2nd layer:

• 1 Tomato chopped
• Cabbage 1\2 cup
• 2 tablespoon Cheese Spread
• Mashed Boiled Peas 1\2 cup
• Mashed Boiled Carrots 1\2 cup
• Salt to taste

Method:

1. Mix all the ingredients for the 1st layer.
2. Mix all the ingredients for the 2nd layer.
3. Apply butter on one side of the bread slices.
4. Take one slice and spread the mixture of the 1st layer.
5. Place the 2nd slice on top. Spread the mixture of the second layer.
6. Place the second layer. Place the third layer.
7. Heat the toaster. Put the sandwiches. Lightly toast for 3 - 4 minutes.

Serve hot with Ketchup and French Fries.

Serving Size: Makes 12-16

Ingredients:
• 2 cups plain flour
• 3 teaspoons baking powder
• 2 tablespoons caster sugar
• 2 eggs, lightly beaten
• 750mL buttermilk
• 75g unsalted butter, melted
• Extra unsalted butter for greasing pan

For a smiley touch up:
• Blueberries
• Strawberries, chopped

Method:
• Stir the flour, baking powder and sugar together in a bowl.
• Add the eggs, buttermilk and melted butter, whisk to combine.
• Heat a large non-stick fry pan over medium heat and melt ¼ teaspoon of the extra butter.
• Pour 1/3 cup of pancake batter into the pan and cook for 2-3 minutes until bubbles appear on the surface.
• Turn the pancake over gently and cook for another minute.
• Transfer cooked pancakes to a plate and keep warm (oven at 120°C) while cooking the rest of the pancakes.
• To make the smiley faces, fruit-loving children will have fun using blueberries for eyes and the chopped strawberries to make a mouth.

Ingredients:
• 2 chickens, cut into eighths
• 1 chopped onion
• 2 chopped cloves garlic
• Salt and white pepper for taste
• 1 green bell pepper, diced
• 1 medium very ripe peeled, seeded and chopped tomato
• 1 cup dry white wine
• Pinch of cayenne pepper

Method:
• Take a oven proof dish and mix all the ingredients.
• Cover the dish properly and cook on low for 6 to 8 hours until the chicken is tender.
• Serve with French bread and wine.

It does take time however the result product is awesome. You can feel the taste of every spices inside the chicken.
