    Have you ever tasted hunter style chicken? Yes I am talking about Chicken Cacciatore. Cacciatore means "hunter" in Italian. Cacciatore is popularly made with braised chicken (pollo alla cacciatora) or rabbit. This type of chicken is generally prepared with tomatoes, onions, mushrooms, herbs, often bell pepper, and sometimes wine. There are many different variations of this dish based upon ingredients available in specific regions.

     

    Ingredients for this recipe:

    • 2 tbsp olive oil
    • 1 whole roasting chicken, cut in quarters
    • salt and fresh ground black pepper to taste
    • 1 large onion, sliced (so they hold together, slice the onions "with the grain" in the same direction as the lines of the onion, instead of across the onion like they are usually sliced)
    • 8 oz fresh mushrooms, quartered
    • 4 cloves garlic, sliced
    • 3 springs rosemary
    • 1 tsp dried oregano
    • 1/2 tsp red pepper flakes, or to taste
    • 1 cup tomato sauce
    • 1/2 cup water
    • 2 red bell peppers, sliced
    • 2 green bell peppers, sliced

    Ingredients

    • 1 cup heavy cream
    • 400 gm dark chocolate
    • About 200 gm additional dark chocolate
    • 1 and 1/2 cups cocoa powder
    • 3 tbsp butter (optional)

    Method:

    • - Break chocolate into small pieces and put in a large bowl.
    • - Bring cream slowly to a light boil.
    • - Pour boiling cream over chocolate and keep stirring until all the chocolate has melted and the batter is homogenous.
    • - If you want to add butter, do so now, before the batter cools and thickens.
    • - When the batter is warm, it is very creamy. Thicken it by whisking.
