  • Quick Chicken recipe for an unexpected guest

    May be you get home from work and an unexpected guest is dropping in for dinner. Whatever the reason, preparing something really delicious in such a short time sounds crazy. But it isn't.  You will be amazed that this chicken recipe can be prepared in less than 15 minutes.

    Ingredients:
    • 2 boneless, skinless chicken breasts
    • 2 tablespoons olive oil
    • Juice of one orange
    • 2 tablespoons butter (omit for a healthier version)
    • 4 mint leaves, sliced
    • Zest of one orange (optional)

    Method:
    1. Put a skillet over medium-high heat and let it get hot.

    2. While the skillet is charging, put the chicken between two pieces of waxed paper or into a plastic bag and take out your frustrations on it. The chicken should end up about 1/4 inches thick (or as close to it as possible.)

    3. Add the olive oil to the skillet. Wait about 5 seconds for the oil to get hot and add the chicken breasts. Look out for spatters when you add the chicken.

    4. Immediately move the chicken around a bit. The skillet may be hot enough that the chicken will brown too quickly, so you want to give it a little push. Add the orange juice.

    5. Cook the chicken 6 to 7 minutes and then flip. Cook for 6 to 7 minutes more or until the chicken is done all the way through. (If you have a meat thermometer, you can remove the chicken at around 162 degrees.)

    6. Finally, add the butter, mint and orange zest and let the butter melt. Let the chicken rest 2 to 3 minutes before plating.

    Accompany with a nice green salad.

    How about fishy Christmas this year! Hey, I am talking about fish in the main course of Christmas dinner menu, make it different this year. Mostly people think about meat, beef or lamb, surprise your guests with some delightful recipes of fish. Let's welcome the new year with (meatless) meal.

     


     

    Baked cod with lemon-garlic crust

    Serving size: 8

    Ingredients:
    • 1/2 cup olive oil
    • 3 garlic cloves, crushed
    • 1/4 cup chopped fresh Italian flat leave parsley
    • 1 tablespoon fresh thyme leaves
    • 2 cups panko crumbs
    • 2 lemons, zested then quartered
    • 2 pounds wild cod fish filets
    • 6 tablespoons butter, melted
    • Salt and pepper

    Directions:
    1. Preheat oven to 350 degrees F.
    2. Add the olive oil, garlic, parsley and thyme to a large skillet and gently warm on low heat for four minutes. Increase the heat to medium and add the panko crumbs. Stir until the panko is well moistened and add salt and pepper to taste. Continue to toast the panko, stirring frequently, until golden brown. Remove from heat and set aside.
    3. Place the cod pieces, side by side, in an oven-safe baking dish (preferably glass). Sprinkle the fish with salt, pepper and lemon zest. Generously top each piece of fish with the panko crumbs, gently pressing them into the top of the fish. Evenly pour the melted butter over the panko crumbs.
    4. Bake for 25 minutes or until the fish is opaque but still moist in the center. (Factor about 10 minutes of baking time per 1" thickness of fish.)
    5. Remove from oven and allow to rest for 10 minutes. Squeeze lemon wedges over the fish before serving.

  • Party Potato Nachos

    Love nachos but sick of the chips getting soggy before being served? This party platter uses potato slices in place of the chips so that you don’t have to worry about soggy chips. All of the same great taste as nachos, and party perfect.

    Ingredients
    • 2 tablespoons Vegetable oil
    • 2 large baking potatoes, cut into 1/2-inch thick slices
    • salt and ground black pepper to taste
    • 1 tablespoon vegetable oil
    • 1/2 pound ground beef
    • 1 (15 ounce) can black beans, drained
    • 2 tablespoons taco seasoning
    • 2 tablespoons water
    • 8 ounces shredded Cheddar cheese, divided
    • 1/4 cup shredded lettuce
    • 1 small tomato, chopped
    • 1/4 cup sour cream
    • 1/4 cup guacamole

    Directions
    • Preheat oven to 450 degrees F (230 degrees C).
    • Pour 2 tablespoons of vegetable oil into a large bowl.
    • Add the potato slices to the bowl and toss in the oil to coat the potatoes.
    • Arrange potato slices on a baking sheet in a single layer.
    • Sprinkle the potato slices with salt and black pepper.
    • Bake the potato slices in the preheated oven for about 20 minutes or until the slices are golden brown.
    • Heat 1 tablespoon of vegetable oil in a skillet over medium heat.
    • Brown the ground beef in the oil approximately 8-10 minutes.
    • Drain off excess oil and grease and crumble the ground beef.
    • Add the black beans to the skillet with the ground beef.
    • Add the water and taco seasoning to the skillet and stir.
    • Bring the skillet mixture to a boil and then reduce the heat to medium-low.
    • Simmer approximately 10 minutes.
    • Arrange the baked potato slices on a serving platter and sprinkle with half of the cheese.
    • Add the meat and bean mixture to the top of the potatoes and cheese.
    • Sprinkle the top with the other half of the cheese.
    • Spread the lettuce over the top of the cheese.
    • Garnish with the sour cream, guacamole, and tomato and serve.

    Pro Tips and Substitutions
    • Substitute Pepper Jack cheese in place of the cheddar for some added kick.
    • You can also add diced bell peppers and / or diced onion to the meat and bean mixture if desired.

    Always on the lookout for new and interesting things to do with avocados, I was super excited when I found a yummy mango and avocado salad recipe. I’ve made a few changes and additions and it has quickly become a favorite in my house – even for my hubby who isn’t particularly ‘into’ salads.
     
    Ingredients
    • 4 cups grilled chicken, sliced into 1/2 inch wide strips
    • 1 (8 oz) can of mandarin orange slices, drained
    • 2 avocados – peeled, pitted and diced
    • 10 ounces baby spinach leaves
    • 1/4 cup sliced almonds

    Directions
    • In a large bowl, toss together chicken, mandarin orange slices and diced avocados
    • Divide baby spinach equally into 8 serving bowls or onto 8 serving plates.
    • Top each dish of spinach with some of the chicken, mandarin orange and avocado mixture (about 3/4 – 1 cup each)
    • Sprinkle sliced almonds on each salad and serve.

    Pro Tips and Substitutions
    • Although I prefer this salad without dressing, a basic lime vinaigrette or a cilantro and lime vinaigrette work well with this.
    • You can omit the almonds or substitute walnuts, pinenuts, or sunflower seeds.
    • Mango, (about 1 cup diced), may be substituted for the mandarin oranges.
