    Russian salad - for a small home gathering

    Ingredients
    Boiled potatoes, apples, boiled chicken, boiled beans, cream, yoghurt, mayonnaise, and salt to taste
    Method
    Cut potatoes, chicken and apple into pieces. Mix yoghurt, cream and mayonnaise well. Add potatoes, chicken and apples, and your Russian salad is ready.

    Hand tossed salad - an ideal picnic salad

    Ingredients
    Diced cucumber, tomato, radish, onion, carrot, beetroot, cabbage, lettuce, salt, white pepper, malt vinegar and coriander.
    Method
    This is the most basic hand tossed salad, yet always a winner. Mix all diced vegetables. Add few drops of malt vinegar, salt/pepper to taste and garnish with coriander.

    Picotica salad - to accompany Mexican delicacies

    Ingredients
    Cucumbers, red and yellow bell pepper, tomatoes, finely chopped coriander, carrots, red chilli paste, lemon juice, salt, pepper, chopped garlic and cumin seeds powder.
    Method
    Cut all vegetables into fine cubes. Mix all together with chilli paste, lemon juice and cumin seed powder. Add salt/pepper to taste.

    Pre Breakfast:
    • 2 glasses of water, followed by one fruit.

    Breakfast:
    • 2 wholegrain tomato-cucumbers, brown bread toast/ a bowl of oats made with water and skimmed milk sweetened with 3 table spoons raisins or Oats.

    Between Breakfast and Lunch:
    • Three glass of water, if hungry, have a piece of fresh fruit / 20 Pistachio / seven almonds.

    Lunch:
    • 1 big bowl (250 ml cup) vegetable salad
    • 1 big bowl cooked vegetable
    • Grain option - 2 brown bread / 1 small bowl cooked brown rice/ 1 small bowl whole wheat pasta
    • Protein option: 1 small bowl boiled sprouts/ 1 small bowl of any pulses/ 60 gm light tofu/ 1 bowl low fat yogurt/ 2-3 egg white/ 100 gm chicken breast/ 100 gm fish.

    Snacks:
    • One or two pieces of fresh fruit/ 4 pieces of any dried fruit/ 1 bowl boiled corn. Have at least five glasses of water between lunch and dinner.

    Dinner:
    • 1 big bowl of salad / 1 big bowl of vegetables or clear vegetable soup. No oil, butter, cream or milk, 1 portion of grain and 1 portion of protein as lunch.

    Must Dos:
    • No more than three teaspoons of oil for the whole day.
    • Add 1 tablespoon of flax seeds every day. You can mix it in salads.
    • Drink at least 2.5 to 3 litres of plain water daily, depending on your exercise levels.
    • No fruit juices only fruits.
    • Satisfy your sweet tooth with fruits and dried fruit. You can also have a bowl of yogurt with raisins or a 100 calorie of granola bar.
    • Exercise daily for at least 40 minutes. Eat when you are hungry and stop when you are full.

    We all know the health benefits of salad however it's very important to choose vegetables for salad. Including nutritious vegetables in your salad will make it a healthy diet. If possible, salads should be made entirely of raw vegetables and raw fruits. Do not mix too many foods in a meal, it may spoil the taste.     Lettuce: Lettuce is the foundation for your salad. If you prefer iceberg lettuce, look for a dark green and weighty head, with no brown spots on the stem or outer leaves. Check the condition of red leaves in bagged lettuce because they tend to spoil first. It's nutritious and tasty too.

    Raw broccoli: This adds crunch and powerful phytochemicals, nutrients found only in plants, to your salad. Look for heads with tight, even florets. Color should be an even dark green or bluish-green. Squeeze stalks gently to ensure firmness and check that leaves are intact. You can also try packaged broccoli.
